Harlem Students Face Off in Teen Battle Chef Competition

Twelve Harlem students who have mastered an eight-week culinary program will put their cooking skills to the test when they face off in Teen Battle Chef Live.

Teen Battle Chef Live is the culmination of an intensive program aimed at preventing obesity and diabetes. Students from Democracy Prep, a Harlem charter school, and The Harlem Dream Center, an afterschool program, will show off the techniques they learned that are needed to prepare delicious and nutritious food through healthy cooking. Two teams of students will complete a designated recipe that reflects the healthy, multi-ethnic meals and sophisticated culinary techniques they learned during the program.

New York City First Lady Chirlane McCray will deliver opening remarks, with Chef Alexander Smalls, Food Network personality Ellie Krieger and Izabela Wojcik, Director of House Programming of the James Beard Foundation serving as judges.

The event is sponsored by EmblemHealth and the Metro-Manhattan Chapter of the Links, Inc. The event is open to the public and free to attend.

The year of kale is upon us, and it is no wonder why so many people pledge their loyalty to this nutritionally dense super food.

Restaurants, celebrities and chefs swear by kale both for its taste and its nutrition. A dark, leafy green vegetable that grows well in a cold climate, kale contains numerous antioxidants and vitamins A, K, C, folate, calcium, potassium and more.

Now that the days are shorter and the weather is cold, kale season is just beginning. Fresh kale is available in farmer’s markets from the middle of summer. But kale is hardy and some claim it is better after frost ends the growing season. So, you can find kale well into the winter.

Based on a 2,000-calorie diet, one cup of boiled kale provides your body with more than 300 percent of the daily value of vitamin A and 1,000 percent of vitamin K.

Among many health benefits, vitamin A helps keep skin and mucous membrane cells healthy and moist. The moistness helps ward off bacteria and viruses since it makes it harder for them to latch on and cause damage to your immune system.

Vitamin K can regulate the clotting of blood and maintain bone health. With the upcoming winter season, slippery walkways can make for one nasty fall. But by taking the necessary precautions now and giving your body the nutrients it needs, you can have the best defense intact to help protect against injury.

Available at your local farmer’s market, kale, garlic and bell and jalapeño peppers, when combined, make for a delicious treat.

The following recipe requires little prep time in the kitchen and is bursting with vitamins and minerals:

Kale with Garlic and Peppers
Ingredients:
2 teaspoons olive oil
2 cups red bell pepper, sliced
1 tablespoon jalapeño pepper, chopped and seeded
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
4 cups kale, chopped and stems removed
½ cup low-sodium vegetable broth
1 clove garlic, minced

Preparation: Heat olive oil in a Dutch oven or large saucepan over medium-high heat. Add red bell pepper, jalapeño, salt and black pepper and sauté three minutes or until tender. Add chopped kale and broth and cover. Reduce heat to medium-low and cook 10 minutes or until tender, stirring once. Stir in garlic and increase heat to medium. Cook uncovered for two minutes or until liquid evaporates.

The best gift you can give your family and friends is a meal that is both healthy and flavorful. A recipe for optimal health: eat nutritious food, dance, laugh, and be active. Enjoy life!

The chill is upon us – the days are dimming and hibernation feels very appealing. But while the air is brisk and your spirits are high, it’s time to gather the last roots of warm sustenance at your local farmer’s market.

All good things come to an end and we are near the end of the growing season. Before farmers’ markets close for the season, stock up on some hearty fruits and vegetables that can last up to a year or more if frozen, and will ignite your body with warmth and allow you to brave the chilling air.

Instead of roasting marshmallows, pan-roasting root vegetables on your stove top will prove to be a far healthier alternative that will add to the ambience of a cold night.

Potatoes, for example, are an excellent source of dietary fiber that provides feelings of fullness and helps to promote digestive regularity.  An averaged sized potato (about 5.3 oz) with its skin intact also contains 45% of the recommended daily value of vitamin C, 620 mg of potassium – which is comparable to bananas, spinach and broccoli – and other essential vitamins and minerals your body needs to stay healthy.  Added bonus: an average sized potato only contains 110 calories and has no fat!

Parsnips, which are also rich in fiber, are very low in saturated fat, rich in vitamin K and vitamin C, and high in folate and potassium.  And because parsnips are naturally cholesterol-free, by eating this nutritious veggie, you can reduce your risk of developing cardiovascular disease.

With the winter months quickly approaching, why not give your eyes the necessary vitamin A needed to promote good eye health by eating carrots.  After all, your vision is essential while driving in the snow.

The following easy-to-make recipe is sure to delight and will send you out in the cold to your local farmer’s market one final time this season.

Herb Roasted Vegetables

Ingredients:
4 carrots, chopped
2 medium potatoes, chopped
3 parsnips, chopped
¼ cup cilantro, finely chopped
¼ cup parsley, finely chopped
1 tablespoon mint, finely chopped
1 tablespoon olive oil
Salt and pepper, to taste

Preparation:  Combine fresh herbs and olive oil.  Toss with vegetables and add salt and pepper to taste.  Place in a skillet and cover to pan-roast vegetables and cook until tender.

Fresh, local produce helps keep vital nutrients intact.  Healthy living is achieved by combining both proper nutrition and daily exercise.  Weather the cold with healthy living!

 NEW YORK CITY – Manhattan’s Physician Group (MPG) has opened a multi-specialty medical practice at 215 West 125th Street, between Adam Clayton Powell Jr. and Frederick Douglass Boulevards in Harlem to provide coordinated health care with increased access and convenience for all residents in the community.

EmblemHealth will provide “point-of-care” support to MPG patients in the Harlem facility to help with medication and treatment adherence, home care, and community resources. Point-of-care coordination helps reduce the need for hospital readmission after discharge and has resulted in improved health outcomes and increased member satisfaction.

MPG recently received Patient-Centered Medical Home Recognition at Level 3, the highest level, for six of its practices in Manhattan from the National Committee for Quality Assurance (NCQA). Under a patient-centered medical home model, patients actively participate in their own care, and treatment is coordinated through a primary care physician who leads a team of health care professionals.

Federal and New York State health reforms encourage patient-centered medical home models. Medical homes create meaningful partnerships among physicians, patients and their families.

“To provide the highest level of quality care, we are continually upgrading our services to provide the best outcomes for our patients,” said Howard Tepper, MPG Chief Executive Officer, noting that the new Harlem office replaces an office on Amsterdam Avenue. “The medical home model is another change to support superior care.
